Harold Wilken and his son Ross are 5th and 6th generation farmers in east central Illinois. On the
2,500+ Certified Organic acres of Janie’s Farm, they grow dozens of varieties of wheat, ancient grains,
oats, rye, corn, buckwheat, and more in a biodiverse rotation.

Then, at Janie’s Mill just a few miles up the road, they transform those crops into dozens of flours,
cracked grains, and other products that go straight from Janie’s Farm, to Janie’s Mill, to you.

Harold had long been thinking about bridging the gap between commodity production and the local
food movement. “I thought, really, my organic grain has to go 700 miles to feed a chicken, when
there’s all these millions of people right here in my food-shed who eat bread?” So in early 2016,
Harold and Ross, along with Head Miller and Mill Manager Jill Brockman-Cummings, started to build and
operate Janie’s Mill, the first organic stone mill in Illinois.

They work closely with artisanal bakers to ensure that every Janie’s Mill product is of the high quality
and consistency that bakers demand. And business has boomed as professional and home bakers from
Los Angeles to New York City discover, and get hooked on, the quality and flavor of Janie’s Mill
products. But Harold and Ross are happiest when those products stay right here in the Midwest!

Our Inspiration
We named our farm and mill after our daughter Janie who passed away in 2001 at the age of 15. Her
passing marked the dawning of a new day, as we felt her spirit leading us to abandon chemicals,
transition to organic, and grow healthy grains. We have been blessed and continue to be led by Janie’s
spirit in everything we do

Our Mill and Milled Products
Stone milling is an art and a science. Key to our high-quality products is the skill of our miller, and the
modern science behind the ancient, time-tested technology of stone-milling.
Our two stone mills were custom-made for us by Engsko, a Danish company that has been in the milling
business for over a century. We carefully monitor the temperature of the stones to ensure that they
stay cool and preserve all the nutrition of the whole kernel--including the bran and germ, with all of
their essential proteins, oils, vitamins, and minerals. Even our sifted flours contain 70-90% of the whole
kernel, so you get more flavor and more nutrition!
